Heat stable

Heat stable proteins were equally good in progressive motility, but the control was better.

Both genes are expressed at normal (25C) soil temperature, but only the heat stable gene is expressed at high (30C) soil temperature.

Being heat stable, the colour is retained during the cooking process.
